Pasta Soufflé with Hidden Vegetables

Συστατικά
- 1 carrot
- 1 sweet potato
- 1 onion
- 1 zucchini
- 2 tbsp olive oil
- Salt
For the Assembly
- 250 g penne
- Salt
- 150 g shredded cheese mix

- Peel the carrot and sweet potato and cut them into small pieces.
- Dice the onion and zucchini, and place all the vegetables in a pot.
- Fill the pot with water to cover the vegetables, and add salt.
- Cook over medium heat for about 20 minutes, until the vegetables are soft.
- Using a slotted spoon, transfer the vegetables directly to a food processor. Reserve the vegetable broth in the pot for cooking the pasta.
- Add the olive oil and a pinch of salt to the food processor, and blend until the vegetables form a smooth cream.

- Preheat the oven to 220°C (fan setting).
- Place the pot with the vegetable broth over medium heat. Add water if needed to cook the pasta, and bring to a boil.
- Add salt and the penne, cooking according to the package instructions.
- Drain the pasta, reserving a little of the cooking water in case it's needed later.
- Return the pasta to the pot, and mix in the vegetable cream and 100 g of the cheese mix. Stir with a wooden spoon until the pasta and cream are well combined. If the mixture is too thick, thin it out with some reserved pasta water.
- Transfer the pasta mixture to a 20x25 cm baking dish, and sprinkle the remaining cheese mix on top.
- Bake for 15-20 minutes, until the top turns golden brown.
- Remove the dish from the oven, let it cool slightly, and serve.
