Orzo with Lentils and Beef

Συστατικά
- 300 g beef (round cut, diced)
- 150 g medium-sized orzo
- 150 g lentils
- 4 tbsp olive oil
- 1 garlic clove (minced)
- ½ onion (finely chopped)
- 1 tbsp tomato paste
- 250 g grated tomato
- Salt
- 1 pinch granulated sugar
- 800 g water
For serving:
- Grated graviera cheese

- Prepare the Lentils:
- Fill ¾ of a pot with water and bring it to a boil over medium-high heat.
- Rinse the lentils under running water, then add them to the boiling water. Boil for 10 minutes.
- Drain the lentils and set aside.
- Brown the Beef:
- Heat the pot over medium-high heat. Add 2 tbsp olive oil and the beef cubes. Sauté for 2-3 minutes until browned.
- Remove the beef and set aside in a bowl.
- Sauté Aromatics and Base:
- Add the remaining olive oil to the pot. Sauté the minced garlic and chopped onion for 1-2 minutes until fragrant.
- Add the orzo and lentils to the pot and sauté for another 1-2 minutes.
- Build the Sauce:
- Stir in the tomato paste and mix well. Add the grated tomato, salt, sugar, and water.
- Lower the heat to a simmer and cook for 20-25 minutes, stirring occasionally to prevent sticking.
- Finish Cooking:
- Add the browned beef back to the pot during the last 5 minutes of cooking and stir to combine.
- Serve:
- Remove the pot from the heat. Divide into plates and top with grated graviera cheese.
