Συστατικά
- 6 medium eggs
- 1 pinch of salt
- 3 tbsp olive oil
- 1 red bell pepper
- 80 g grated graviera cheese
- 40 g canned corn
Παρασκευή
- Crack the eggs into a bowl, add the salt, and whisk with a hand whisk until well combined.
- Heat a 26 cm frying pan with a lid over medium heat.
- Dice the red bell pepper.
- Add 1 tbsp olive oil to the pan, followed by the diced pepper. Sauté for 2-3 minutes with a wooden spoon until softened.
- Transfer the pepper to a bowl and set aside. Return the pan to medium heat.
- Add 1 tbsp olive oil and pour in half of the egg mixture. Cover the pan with the lid and cook for 2-3 minutes.
- Remove the lid and sprinkle half of the grated cheese evenly over the omelette.
- Add half of the sautéed pepper and half of the corn. Cover the pan again.
- Turn off the heat and let sit for 1-2 minutes until the cheese melts.
- Transfer the omelette to a cutting board and repeat the process with the remaining egg mixture.
- Take one omelette and roll it tightly into a cylinder.
- Repeat the rolling process for the second omelette.
- Cut each roll into 5-6 pieces and serve.
