Kids' pancakes with honey or jam
They are used as a kids' meal in many parts of Greece. In Crete they are also called “Koutalites”.
My children, Peter, George and Olivia, have loved them as few meals and their grandmother Niki, cooks them regularly for them. They prefer them as breakfast or snack. These pancakes provide energy in the form of simple carbohydrates, the ultimate fuel for high activity throughout the day. However, do not cook them everyday, but only occasionally as a special dish.
Ingredients
- 6 tablespoons of all-purpose flour,
- 1 cup water,
- 1/2 teaspoon salt
- A little olive oil for frying
Preparation
- Mix all ingredients well with a whisk and allow the mixture to stand for about 20 minutes.
- In a frying pan (preferably non-stick), heat the oil (you can add a little salt [just a pinch] in the oil to prevent splashing).
- Using a spoon, drop the mixture in spoonfuls, leaving distance between the pancakes. Fry them for half a minute on each side.
- Remove them from the pan and place them on a plate with paper towels to absorb as much oil as possible.
- Serve with honey or jam or hazelnut praline.
