Giouvarlakia (rice meatballs) with egg and lemon sauce
It is very pleasant winter dish and a favourite among children. It's soft without being pureed. It consists of various foods and can be considered a full dish as it contains foods from all basic food groups. The only group that is left out is that of vegetables that are represented only by carrots, but you can accompany the dish with a small salad of tender lettuce leaves
Ingredients
For the meatballs:
- ½ kg minced meat
- ½ cup soup rice
- 1 egg white
- 1 shot of olive oil
- 1 small onion, grated
- Chopped parsley
In the pot:
- 1 - 1 ½ litre of water
- 2 potatoes, cut into small pieces
- 3 carrots cut into thin slices
- 3 tablespoons olive oil
For the egg-lemon sauce:
- 2 eggs
- 2 lemons
Preparation
- Bring the water to boil in a pan
- Mix all the meatball ingredients and form small balls of a walnut size.
- Throw the balls and the potatoes along with the carrots and olive oil into the boiling water.
- Simmer until the minced meat is cooked.
- Add a little salt and pepper
- Beat the eggs with the lemon juice and add a little hot broth, stirring constantly. Pour the mixture into the pot and let it boil for a few minutes.
