Cannelloni with spinach and cream cheese

This is a dish all children love. It combines pasta for energy, milk and cheese for calcium, and spinach for iron.

Ingredients
  • 1 packet cannelloni - 250 grams
  • 3/4 kg spinach
  • 4 cups various grated cheeses
  • 1 egg
  • 1 tablespoon dill, finely chopped
  • 3 tablespoons olive oil
  • 1 cup evaporated milk
  • Salt and pepper
     

For the sauce:

  • 3 tablespoons flour
  • 3 glasses milk
  • 1 tablespoon butter
     
Preparation
  • Sauté the spinach in a pot with olive oil for 10 minutes.
  • Add 2 ½ cups of the grated cheese, milk, salt, dill and pepper, remove from heat and allow to cool.
  • Fill the cannelloni with the mixture and place them next to each other to a Pyrex dish.
  • In a pot melt the butter, add the flour and slowly pour the milk, stirring constantly.
  • Pour the sauce on the cannelloni along with 1 cup grated cheese.
  • Cover the cannelloni with tin foil so that they do not get burnt.
  • Cook in the oven at 200 degrees for 35 minutes.
  • Remove the foil, sprinkle with ½ cup grated cheese and bake for another 5-10 minutes, taking care that they are not cooked to dry. 
  • Serve warm
