Orzo with Lentils and Beef

  • 300 g beef (round cut, diced)
  • 150 g medium-sized orzo
  • 150 g lentils
  • 4 tbsp olive oil
  • 1 garlic clove (minced)
  • ½ onion (finely chopped)
  • 1 tbsp tomato paste
  • 250 g grated tomato
  • Salt
  • 1 pinch granulated sugar
  • 800 g water

 

For serving:

  • Grated graviera cheese

  • Prepare the Lentils:
    • Fill ¾ of a pot with water and bring it to a boil over medium-high heat.
    • Rinse the lentils under running water, then add them to the boiling water. Boil for 10 minutes.
    • Drain the lentils and set aside.
  • Brown the Beef:
    • Heat the pot over medium-high heat. Add 2 tbsp olive oil and the beef cubes. Sauté for 2-3 minutes until browned.
    • Remove the beef and set aside in a bowl.
  • Sauté Aromatics and Base:
    • Add the remaining olive oil to the pot. Sauté the minced garlic and chopped onion for 1-2 minutes until fragrant.
    • Add the orzo and lentils to the pot and sauté for another 1-2 minutes.
  • Build the Sauce:
    • Stir in the tomato paste and mix well. Add the grated tomato, salt, sugar, and water.
    • Lower the heat to a simmer and cook for 20-25 minutes, stirring occasionally to prevent sticking.
  • Finish Cooking:
    • Add the browned beef back to the pot during the last 5 minutes of cooking and stir to combine.
  • Serve:
    • Remove the pot from the heat. Divide into plates and top with grated graviera cheese.
