Sole fish with Lemon-Green Beans

  • 2 sole fish fillets
  • ½ onion (finely chopped)
  • 1 carrot (diced)
  • 1 medium potato (peeled, 220 g, diced)
  • 4 tbsp olive oil
  • 400 g flat green beans
  • 500 g water
  • Salt
  • Juice of 1 lemon

  • Prepare the Vegetables: Finely chop the onion and dice the carrot and potato into small cubes.
  • Sauté the Vegetables: Heat 2 tbsp olive oil in a pot over medium heat. Add the chopped vegetables and sauté for 3-4 minutes until softened.
  • Add the Green Beans: Add the green beans, water, and a pinch of salt to the pot. Stir well.
  • Simmer the Vegetables: Cover the pot with a lid, lower the heat, and simmer for 30-40 minutes until the vegetables are tender.
  • Prepare the Fish: Cut the sole fillets into smaller pieces, about 3 cm thick.
  • Cook the Fish: Place the fish pieces on top of the green beans in the pot. Cover again and simmer for an additional 5-6 minutes, or until the fish is cooked through.
  • Add Lemon and Olive Oil: Remove the pot from the heat. Add the lemon juice and the remaining olive oil, then gently shake the pot to mix the flavors without breaking the fish.
