Egg with tomato

You will have often read or heard that eggs must be introduced in the diet of infants after the first year of their life, due to its allergenic action. In fact, its introduction at a younger age allows the body to adjust and reduces the risk of allergic reactions in life later. Of course, if you notice any reaction, you will stop using eggs and contact your paediatrician. Eggs are a very nutritious food with high quality protein and a variety of vitamins and minerals, essential for the normal growth and formation of the infant's body.
 

Ingredients
  • 1 egg
  • 1 medium tomato, peeled, cut into cubes
  • 1 tablespoon of olive oil
     
Preparation
  • Put the egg in a pot, and cover with cold water.  Make sure the whole egg is covered with water. Bring to the boil and simmer for 2 minutes.
  • Cut the egg in half and remove the inside from both sides with a teaspoon. Put it in a small pan.
  • Mix it with tomato and cook it at low heat for a few minutes, until the tomato is also heated.
  • If it contains larger pieces, you can mash it in mixer.
  • Add olive oil and stir.
