Cake with olive oil and orange

Cakes are a favourite for children and yet another snack solution that they must have with them in nurseries and at school a few years later.  Cakes may be a solution but they contain enough butter or margarine in most of its versions. The solution I am suggesting you is to make it with olive oil instead of butter. Along with flour, eggs and orange juice makes a fantastic snack for children's nutrition. The only drawback is the sugar, which can be reduced if you do not want a very intensely sweet flavour. 

Ingredients
  • 1 cup (240 ml) olive oil
  • 500g self raising flour
  • 2 cups sugar
  • 5 eggs
  • 1 cup orange juice
  • Zest of 2 oranges
     
Preparation
  • Beat the oil and sugar in a mixer. In the following order, add: eggs, orange zest, juice and then slowly pour the flour.
  • Pour the mixture into a buttered baking pan or large cake mould.
  • Preheat oven to 180ο Celsius and bake the cake for about 1 hour.
  • Allow to cool and turn it upside down on a platter.
     

 

Suggestion: After buttering the pan, sprinkle it with a little sugar. It will become more crispy and tasty
