- 70 g rolled oats
- 100 g all-purpose flour
- 1 vanilla powder or extract
- 1 tsp cinnamon
- 1 ½ tsp baking powder
- 1 pinch of salt
- 1 banana
- 1 medium egg
- 100 g whole milk
- 50 g honey
- 3 tbsp olive oil (for cooking)

- Prepare the Dry Ingredients: Place the oats, flour, vanilla, cinnamon, baking powder, and salt in a food processor. Blend until the oats are finely ground.
- Mash the Banana: Peel the banana and mash it in a bowl with a fork until smooth.
- Mix the Wet Ingredients: Add the egg, milk, and honey to the banana, mixing with the fork until well combined.
- Combine Wet and Dry Mixtures: Add the dry mixture to the wet ingredients and stir until you have a smooth batter.
- Heat the Pan: Place a pan over medium-low heat and allow it to warm up.
- Cook the Pancakes: Add 1 tbsp of olive oil to the pan, then spoon 4 tbsp of batter onto the pan, keeping them spaced apart as they will spread.
- Flip the Pancakes: Check the edges of the pancakes; once they are cooked and caramelized on one side (you can tell when they lift easily from the pan), flip them with a spatula. Cook for about 2 minutes on each side.
- Repeat: Transfer the cooked pancakes to a plate and repeat the process for the remaining batter, making about 3 batches in total.
- Serve: Divide the pancakes among plates, drizzle with honey, and serve with blueberries and banana slices.
