Apple Cupcakes with Dates and Flaxseed

  • 100 g Medjool dates (pitted)
  • 1 medium egg
  • 1 egg yolk (from a medium egg)
  • 70 g honey
  • 1 tsp vanilla extract
  • 1 medium red apple
  • 50 g olive oil
  • 70 g all-purpose flour
  • 100 g whole wheat all-purpose flour
  • 1 tsp baking powder (leveled)
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 2 tbsp ground flaxseed

 

For the frosting:

  • 100 g cream cheese
  • 20 g honey
  • ½ tsp vanilla extract

 

For serving:

  • Cinnamon

For the cupcakes:

  • Preheat the oven to 170°C (340°F) with fan.
  • Cut parchment paper into 11x11 cm (4x4 in) squares and place them in a 6-cup muffin tray.
  • Soak the dates in boiling water in a bowl for 5 minutes.
  • In another bowl, whisk the egg, yolk, honey, and vanilla extract together with a hand whisk.
  • Peel and grate the apple using the coarse side of a grater, then set it aside.
  • Blend the soaked dates and olive oil in a food processor until smooth.
  • Add the date puree to the wet mixture and stir with a silicone spatula.
  • In another bowl, mix the flours, baking powder, baking soda, cinnamon, and salt.
  • Combine the dry ingredients with the wet mixture, then fold in the grated apple and flaxseed.
  • Divide the batter evenly among the prepared muffin cups. Bake for 20-25 minutes, until golden brown. (Check doneness by inserting a toothpick; if it comes out clean, the cupcakes are ready.)
  • Remove from the oven and let cool.

 

For the frosting:

  1. In a bowl, mix the cream cheese, honey, and vanilla extract with a spoon until smooth.
  2. Spoon the frosting over the cooled muffins.

For serving:

Sprinkle cinnamon on top and serve.
