Sole fish with Lemon-Green Beans

- 2 sole fish fillets
- ½ onion (finely chopped)
- 1 carrot (diced)
- 1 medium potato (peeled, 220 g, diced)
- 4 tbsp olive oil
- 400 g flat green beans
- 500 g water
- Salt
- Juice of 1 lemon

- Prepare the Vegetables: Finely chop the onion and dice the carrot and potato into small cubes.
- Sauté the Vegetables: Heat 2 tbsp olive oil in a pot over medium heat. Add the chopped vegetables and sauté for 3-4 minutes until softened.
- Add the Green Beans: Add the green beans, water, and a pinch of salt to the pot. Stir well.
- Simmer the Vegetables: Cover the pot with a lid, lower the heat, and simmer for 30-40 minutes until the vegetables are tender.
- Prepare the Fish: Cut the sole fillets into smaller pieces, about 3 cm thick.
- Cook the Fish: Place the fish pieces on top of the green beans in the pot. Cover again and simmer for an additional 5-6 minutes, or until the fish is cooked through.
- Add Lemon and Olive Oil: Remove the pot from the heat. Add the lemon juice and the remaining olive oil, then gently shake the pot to mix the flavors without breaking the fish.
