Stuffed Pasta Shells with Turkey Mince

Συστατικά
- 350 g pasta shells
- 2 tbsp olive oil
- 500 g ground turkey
- ½ onion (finely chopped)
- 1 garlic clove (minced)
- 1 carrot (grated)
- 1 tbsp tomato paste
- 300 g grated tomato
- 500 g water
- 1 pinch granulated sugar
- 1 tsp dried oregano
- Salt
- 80 g grated regato cheese
Παρασκευή
- Cook the Pasta Shells:
- Fill ¾ of a pot with water, add a pinch of salt, and bring to a boil over medium-high heat.
- Add the pasta shells and cook for 2 minutes less than the package instructions, stirring occasionally.
- Drain, rinse under cold water, and set aside to cool.
- Prepare the Filling:
- Heat the same pot over medium-high heat. Add olive oil and turkey mince, and sauté for 5-6 minutes until browned.
- Add the chopped onion, minced garlic, and grated carrot. Sauté for another 1-2 minutes.
- Stir in the tomato paste and cook for 1 minute.
- Add the grated tomato, water, salt, and sugar. Reduce the heat to low and simmer for 10 minutes. Ensure the mixture remains moist and doesn’t dry out.
- Remove from heat, add oregano, and stir well.

- Preheat the Oven:
- Preheat the oven to 200°C (390°F) with fan.
- Assemble the Dish:
- Spread 3-4 tbsp of the turkey mince mixture over the base of a 25x32 cm (10x13 in) baking dish.
- Fill each pasta shell with 1 tbsp of the turkey mixture and arrange them in the dish, side by side.
- Pour any remaining mince mixture over the shells. Sprinkle the grated regato cheese on top.
- Bake:
- Place the dish in the oven and bake for 5 minutes until the cheese is melted and golden.
- Serve:
- Remove from the oven, divide onto plates, and serve warm.
