Stuffed Pasta Shells with Turkey Mince

  • 350 g pasta shells
  • 2 tbsp olive oil
  • 500 g ground turkey
  • ½ onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 carrot (grated)
  • 1 tbsp tomato paste
  • 300 g grated tomato
  • 500 g water
  • 1 pinch granulated sugar
  • 1 tsp dried oregano
  • Salt
  • 80 g grated regato cheese

  • Cook the Pasta Shells:
    • Fill ¾ of a pot with water, add a pinch of salt, and bring to a boil over medium-high heat.
    • Add the pasta shells and cook for 2 minutes less than the package instructions, stirring occasionally.
    • Drain, rinse under cold water, and set aside to cool.
  • Prepare the Filling:
    • Heat the same pot over medium-high heat. Add olive oil and turkey mince, and sauté for 5-6 minutes until browned.
    • Add the chopped onion, minced garlic, and grated carrot. Sauté for another 1-2 minutes.
    • Stir in the tomato paste and cook for 1 minute.
    • Add the grated tomato, water, salt, and sugar. Reduce the heat to low and simmer for 10 minutes. Ensure the mixture remains moist and doesn’t dry out.
    • Remove from heat, add oregano, and stir well.

  • Preheat the Oven:
    • Preheat the oven to 200°C (390°F) with fan.
  • Assemble the Dish:
    • Spread 3-4 tbsp of the turkey mince mixture over the base of a 25x32 cm (10x13 in) baking dish.
    • Fill each pasta shell with 1 tbsp of the turkey mixture and arrange them in the dish, side by side.
    • Pour any remaining mince mixture over the shells. Sprinkle the grated regato cheese on top.
  • Bake:
    • Place the dish in the oven and bake for 5 minutes until the cheese is melted and golden.
  • Serve:
    • Remove from the oven, divide onto plates, and serve warm.
