Oat Cookies with Banana and Chocolate

  • 1 medium banana (ripe)
  • 130 g honey
  • 80 g olive oil (plus extra for greasing)
  • 1 tsp vanilla extract
  • 130 g all-purpose flour
  • 170 g oat flakes
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • A pinch of salt
  • 70 g chocolate chips

  • Preheat the oven to 180°C (fan setting).
  • Line a low-rimmed baking tray with parchment paper and set aside.
  • Place the banana in a bowl and mash it with a fork.
  • Add the honey, olive oil, and vanilla extract, and mix until the ingredients are combined.
  • Add the flour, oats, baking soda, cinnamon, salt, and chocolate chips. Mix until well combined, then let the dough rest for 15 minutes.
  • Grease your hands with a little olive oil (to prevent the dough from sticking) and shape the dough into 16 round cookies, about 40 g each.
  • Arrange the cookies on the baking tray, leaving a small space between each.
  • Wet your hands and gently press down on the cookies to flatten them slightly.
  • Transfer the tray to the oven and bake for 13-14 minutes, until the cookies turn golden brown.
  • Remove the tray from the oven, allow the cookies to cool on a wire rack, and serve.
