- 200 g calamari (cleaned, without tentacles)
- ½ onion
- 1 carrot
- 1 zucchini
- ½ red bell pepper
- 4 tbsp olive oil
- 1 tbsp tomato paste
- 150 g parboiled rice
- 450 g water
- Salt

- Slice the calamari into thin rings, finely chop the onion, and dice the carrot, zucchini, and red bell pepper into 1 cm cubes.
- Heat a pot over high heat until hot.
- Add 1 tbsp olive oil and the calamari, sautéing for ½-1 minute while stirring with a wooden spoon.
- Transfer the calamari to a bowl, cover with plastic wrap, and set aside.
- Lower the heat to medium, add the remaining olive oil and vegetables, and sauté for 3-4 minutes until lightly browned.
- Add the tomato paste and sauté for another ½ minute.
- Pour in the rice, water, and a pinch of salt. Cover the pot with a lid and cook for 12-15 minutes until the rice is tender.
- Remove from heat, stir in the calamari, and let the pot sit with the lid on for 10 minutes.
- Serve on plates and enjoy.
