Chickpea Rice with Vegetables

- 125 g chickpeas
- ½ onion
- 1 carrot
- 1 red bell pepper
- 4 tbsp olive oil
- 400-500 g water
- 100 g Carolina rice
- Salt

- Place the chickpeas in a bowl and cover them completely with water to soak.
- Transfer the bowl to the refrigerator and let the chickpeas soak for 6-12 hours.
- Remove the bowl from the refrigerator, drain the chickpeas, and rinse them thoroughly under running water.
- Fill a pot with plenty of water and bring it to a boil over high heat.
- Add the chickpeas and boil for 1-1.5 hours until softened.
- Finely chop the onion and dice the carrot and red bell pepper.
- Add the carrot to the pot and boil for another 15-20 minutes until the chickpeas and carrot are tender.
- Drain the pot and return it to medium heat to warm up.
- Add 2 tbsp olive oil, the onion, and the bell pepper, sautéing for 3-4 minutes until softened and golden.
- Add the water, rice, and a pinch of salt, and simmer for 15 minutes until the rice is cooked.
- Remove the pot from the heat, add the chickpeas, carrot, and the remaining 2 tbsp olive oil, and mix well.
- Serve on plates and enjoy.
