Συστατικά
- 250 g carrots
- 3 medium eggs
- 200 g honey
- 170 g olive oil (plus extra for greasing the pan)
- 220 g all-purpose flour (plus extra for dusting the pan)
- 1 ½ tsp baking soda
- 1 ½ tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt

- Preheat the oven to 160°C (320°F) with fan.
- Grease a 10x30 cm (4x12 in) loaf pan with a bit of olive oil, dust it with some flour, shake off the excess, and set it aside.
- In a bowl, whisk the eggs, honey, and olive oil until combined.
- In another bowl, mix the flour, baking soda, baking powder, cinnamon, and salt with a spoon.
- Trim the ends off the carrots and grate them using the coarse side of a grater.
- Add the dry ingredients to the wet mixture, along with the grated carrots, and mix with a spoon until smooth.
- Transfer the batter to the pan. Lightly oil a knife and make a shallow cut lengthwise down the center of the batter to ensure even rising.
- Bake in the oven for 50-55 minutes, until fully cooked and golden. (Check doneness by inserting a toothpick; if it comes out clean, the cake is ready.)
- Remove from the oven and let the cake cool on a rack for 30 minutes.
- Unmold the cake and allow it to cool completely.
- Slice and serve.
