Creamy egg and lemon chicken soup
Many call this dish a “cure-all”, either because they used to eat it when they were sick, or because it really made them feel better. It is a full meal that can contribute in the nourishment of a body without upsetting the stomach as it is easily digested. With the vegetables and chicken chopped, children learn to chew small and soft bites, without posing a choking hazard.
Ingredients
- 1 whole chicken
- 2 onions
- 2 tablespoons olive oil
- 2 potatoes
- 2 courgettes
- 2 stalks celery
- 2 egg yolks
- ½ cup of rice
- ½ cup lemon juice
- Salt and pepper
Preparation
- Wash the chicken and bring it to boil with enough water and onions until soft. Then remove it from the broth and let it cool.
- Peel and finely chop the vegetables and cook in the broth until soft. If necessary, add a little hot water.
- Add the rice, spices and oil and let it boil until soft.
- Beat egg yolks with the lemon juice and add little of the broth, continuing to stir constantly.
- Finally add the mixture to the soup and let it boil for another few minutes so the eggs are cooked.
- Prepare a plate with the broth, vegetables and chopped chicken.
