Creamy egg and lemon chicken soup

Many call this dish a “cure-all”, either because they used to eat it when they were sick, or because it really made them feel better. It is a full meal that can contribute in the nourishment of a body without upsetting the stomach as it is easily digested. With the vegetables and chicken chopped, children learn to chew small and soft bites, without posing a choking hazard.
 

Ingredients
  • 1 whole chicken
  • 2 onions
  • 2 tablespoons olive oil
  • 2 potatoes
  • 2 courgettes
  • 2 stalks celery
  • 2 egg yolks
  • ½ cup of rice
  • ½ cup lemon juice
  • Salt and pepper
     
Preparation
  • Wash the chicken and bring it to boil with enough water and onions until soft. Then remove it from the broth and let it cool.
  • Peel and finely chop the vegetables and cook in the broth until soft. If necessary, add a little hot water.
  • Add the rice, spices and oil and let it boil until soft.
  • Beat egg yolks with the lemon juice and add little of the broth, continuing to stir constantly.
  • Finally add the mixture to the soup and let it boil for another few minutes so the eggs are cooked. 
  • Prepare a plate with the broth, vegetables and chopped chicken.
