Vegetable mash with almonds
Vegetable meals are a very good source of micronutrients, while, at the same time, they can be a pleasant break from animal foods in the infant's diet. Their only disadvantage is their low content of protein, iron and polyunsaturated fatty acids. These can be compensated by almonds. However, be careful: never serve them unless thoroughly ground!
Ingredients
- 1 courgette
- ½ leek
- 2 spinach leaves
- 1 carrot
- 1 potato
- 1 teaspoon finely chopped pasta (stellini)
- 10 almonds
- 1 tablespoon olive oil
Preparation
- In a pot, bring 1 ½ cup of water to the boil.
- Then add the vegetables and almonds.
- Allow to simmer for ½ hour, adding hot water when needed.
- When soft, place them in the food processor and mash them. Add some of the broth to the pot to achieve the desired texture.
- Add olive oil and stir.
If you want to make it taste a little sweeter, replace the potato with a sweet potato or the courgette with pumpkin.
Almonds are an ideal source of omega-3 fatty acids, which are essential for brain development and formation. Children with adequate intake of omega-3 fatty acids show better progress in cognitive skills and less behaviour problems.
