  • 250 g carrots
  • 3 medium eggs
  • 200 g honey
  • 170 g olive oil (plus extra for greasing the pan)
  • 220 g all-purpose flour (plus extra for dusting the pan)
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt

  • Preheat the oven to 160°C (320°F) with fan.
  • Grease a 10x30 cm (4x12 in) loaf pan with a bit of olive oil, dust it with some flour, shake off the excess, and set it aside.
  • In a bowl, whisk the eggs, honey, and olive oil until combined.
  • In another bowl, mix the flour, baking soda, baking powder, cinnamon, and salt with a spoon.
  • Trim the ends off the carrots and grate them using the coarse side of a grater.
  • Add the dry ingredients to the wet mixture, along with the grated carrots, and mix with a spoon until smooth.
  • Transfer the batter to the pan. Lightly oil a knife and make a shallow cut lengthwise down the center of the batter to ensure even rising.
  • Bake in the oven for 50-55 minutes, until fully cooked and golden. (Check doneness by inserting a toothpick; if it comes out clean, the cake is ready.)
  • Remove from the oven and let the cake cool on a rack for 30 minutes.
  • Unmold the cake and allow it to cool completely.
  • Slice and serve.
