Chocolate and Avocado Brownies

  • 170g dark chocolate
  • 50g olive oil
  • 1 medium ripe avocado (200g peeled)
  • 3 medium eggs
  • 200g honey
  • 1 tsp vanilla extract
  • 100g all-purpose flour
  • A pinch of salt

  • Preheat the oven to 170°C (fan mode).
  • Break the chocolate into small pieces and place them in a bowl with the olive oil.
  • Cover the bowl with plastic wrap and microwave at 800W for about 1 minute, until the chocolate melts.
  • Stir with a spoon and set aside.
  • Cut the avocado in half, remove the pit, scoop out the flesh with a spoon, and mash it into a smooth puree using a fork.
  • Add the eggs and honey to the avocado and mix with a whisk until well combined.
  • Add the vanilla extract, flour, salt, and melted chocolate, and mix until the batter is smooth and uniform.
  • Line a 20x20 cm baking pan with parchment paper, pour in the batter, and spread it evenly with a spoon.
  • Place the pan in the oven and bake for 35-40 minutes.
  • Remove from the oven and let it cool completely.
  • Cut into pieces and serve.
