Kid-Friendly Paella with Calamari and Vegetables

  • 200 g calamari (cleaned, without tentacles)
  • ½ onion
  • 1 carrot
  • 1 zucchini
  • ½ red bell pepper
  • 4 tbsp olive oil
  • 1 tbsp tomato paste
  • 150 g parboiled rice
  • 450 g water

  • Slice the calamari into thin rings, finely chop the onion, and dice the carrot, zucchini, and red bell pepper into 1 cm cubes.
  • Heat a pot over high heat until hot.
  • Add 1 tbsp olive oil and the calamari, sautéing for ½-1 minute while stirring with a wooden spoon.
  • Transfer the calamari to a bowl, cover with plastic wrap, and set aside.
  • Lower the heat to medium, add the remaining olive oil and vegetables, and sauté for 3-4 minutes until lightly browned.
  • Add the tomato paste and sauté for another ½ minute.
  • Pour in the rice, water, and a pinch of salt. Cover the pot with a lid and cook for 12-15 minutes until the rice is tender.
  • Remove from heat, stir in the calamari, and let the pot sit with the lid on for 10 minutes.
  • Serve on plates and enjoy.
