Oat Cookies with Banana and Chocolate

- 1 medium banana (ripe)
- 130 g honey
- 80 g olive oil (plus extra for greasing)
- 1 tsp vanilla extract
- 130 g all-purpose flour
- 170 g oat flakes
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- A pinch of salt
- 70 g chocolate chips

- Preheat the oven to 180°C (fan setting).
- Line a low-rimmed baking tray with parchment paper and set aside.
- Place the banana in a bowl and mash it with a fork.
- Add the honey, olive oil, and vanilla extract, and mix until the ingredients are combined.
- Add the flour, oats, baking soda, cinnamon, salt, and chocolate chips. Mix until well combined, then let the dough rest for 15 minutes.
- Grease your hands with a little olive oil (to prevent the dough from sticking) and shape the dough into 16 round cookies, about 40 g each.
- Arrange the cookies on the baking tray, leaving a small space between each.
- Wet your hands and gently press down on the cookies to flatten them slightly.
- Transfer the tray to the oven and bake for 13-14 minutes, until the cookies turn golden brown.
- Remove the tray from the oven, allow the cookies to cool on a wire rack, and serve.
