Crustless Zucchini Pie

- 400 g zucchini
- 100 g spring onions
- ½ bunch parsley
- 1 medium egg
- 50 g whole milk
- 50 g olive oil
- 150 g all-purpose flour
- 1 tsp baking powder
- 250 g feta cheese
- 1 tbsp white sesame seeds

- Prepare the Zucchini: Trim the ends of the zucchinis and grate them into a bowl using the coarse side of a grater. Add salt, mix well with your hands while lightly squeezing the zucchini, and let it sit for 10 minutes.
- Preheat the Oven: Preheat the oven to 180°C (356°F) with fan.
- Remove Excess Moisture: Squeeze the zucchini well with your hands to remove as much moisture as possible and transfer it to a large bowl.
- Add the Vegetables: Finely chop the spring onions and parsley and add them to the bowl.
- Combine Ingredients: Add the egg, milk, olive oil, flour, and baking powder to the bowl. Crumble the feta cheese into the mixture with your hands and mix everything well with a spatula until combined.
- Prepare the Baking Dish: Line a 20x20 cm (8x8 in) baking dish with parchment paper. Transfer the mixture into the dish and spread it evenly with the spatula.
- Add the Sesame Seeds: Sprinkle the sesame seeds over the top.
- Bake: Place the dish in the oven and bake for 50 minutes, or until golden and set.
- Serve: Remove from the oven, cut into pieces, and serve warm or at room temperature.
