- 1 large potato
- 2 carrots
- 200 g zucchini
- 2 tbsp olive oil
- Zest of 1 lemon
- Salt
- 1 medium egg
- 50 g breadcrumbs
- 50 g all-purpose flour
- 2 tbsp olive oil (for brushing)

- Strained yogurt

- Prepare Vegetables: Peel the potato, trim the ends of the carrots and zucchini, and grate all vegetables using the coarse side of a grater.
- Sauté the Vegetables: Heat a large pan over medium heat. Add the olive oil and grated vegetables. Sauté for 5-6 minutes until softened and caramelized.
- Cool the Mixture: Transfer the vegetables to a bowl and let them cool for 10 minutes.
- Preheat the Oven: Preheat the oven to 200°C (390°F) with fan. Line a baking tray with parchment paper and set aside.
- Prepare the Mixture: Add the lemon zest, a pinch of salt, egg, breadcrumbs, and flour to the cooled vegetables. Mix with a spatula until you have a uniform mixture.
- Form the Meatballs: Shape the mixture into 30 g balls (about 16 meatballs) and place them on the prepared baking tray.
- Brush with Oil: Brush the meatballs with olive oil.
- Bake: Bake in the oven for 15-20 minutes until golden brown.
- Serve: Remove from the oven and serve warm with a side of yogurt.
