- 3 medium eggs
- 150 g olive oil (plus extra for greasing the pan)
- 180 g honey
- 180 g orange juice
- Zest of 1 orange
- 250 g all-purpose flour (plus extra for dusting the pan)
- 2 vanilla powders or 2 tsp vanilla extract
- 1 pinch of salt
- 15 g baking powder

- Preheat the Oven: Preheat the oven to 160°C (320°F) with fan.
- Prepare the Cake Pan: Grease a 10x30 cm (4x12 in) rectangular cake pan with olive oil and dust with flour. Shake off the excess and set aside.
- Mix Wet Ingredients: In a bowl, whisk together the eggs, olive oil, honey, orange juice, and orange zest using a hand whisk.
- Add Dry Ingredients: Add the flour, vanilla, salt, and baking powder to the wet mixture. Mix until smooth and well combined.
- Fill the Pan: Pour the batter into the prepared cake pan. Lightly oil a knife and make a shallow cut lengthwise down the center of the batter to ensure even rising.
- Bake: Place the pan in the oven and bake for 40-45 minutes. Check doneness by inserting a toothpick into the center; if it comes out clean, the cake is ready.
- Cool: Remove the pan from the oven and let the cake cool completely.
- Serve: Unmold the cake, slice into pieces, and serve.
