Chicken Roll with Cream Cheese, Spinach, and Peppers

- 2 chicken breast fillets
- 1 red bell pepper
- 2 tbsp olive oil
- 100 g baby spinach
- 120 g cream cheese
- Salt

- Preheat the oven to 180°C (fan setting).
- Heat a frying pan over high heat.
- Slice the red bell pepper into thin strips.
- Add the olive oil and bell pepper to the pan and sauté for 2-3 minutes until softened and slightly browned, stirring with a wooden spoon.
- Add the spinach and stir for 1-2 minutes until wilted and the moisture evaporates.
- Wear gloves and cut each chicken breast horizontally in half. Lay the pieces side by side lengthwise on a sheet of parchment paper with the larger sides facing you.
- Place a second sheet of parchment paper on top and pound the chicken with a meat mallet until very thin.
- Remove the top parchment sheet and season the chicken with salt.
- Spread the cream cheese evenly over the chicken and place the sautéed spinach and peppers lengthwise in the center.
- Using the parchment paper for support, roll the chicken tightly to encase the filling, forming a log.
- Wrap the roll in the parchment paper, then wrap it again in aluminum foil, twisting the ends to seal like candy.
- Place the roll on a baking tray with a rack and transfer it to the oven.
- Bake on the top rack for 30 minutes, then unwrap the aluminum foil and parchment paper. Bake for an additional 10 minutes until lightly golden.
- Remove the tray from the oven and let the roll cool slightly.
- Slice the roll into 16 pieces and serve with mashed potatoes.
